Ropa Vieja
("Old Clothes" Shredded Beef)

Serves 3-4
Ingredients
- 2 lbs Flank Steak
- 2 tbsp Salt
- 2 cups Beef Broth (saved from cooking flank steak)
or 2 cubes Beef Bouillon (Aisle 1)
- 1 tsp Cumin Powder (Aisles 1 & 5)
- 1/4 cup Vinegar (Aisle 1)
- 1 can Goya Tomato Paste (Aisle 1)
- 1 can Goya Tomato Sauce (Aisle 1)
- 1/2 cup Onions, chopped
- 2 tbsp Garlic Paste (Aisle 5)
Directions
- Wash and drain the flank steak
- Fill a pot with enough water to cover the beef, and use a pressure cooker to cook for about 30 minutes, or bring a pot of water to boil, and simmer the beef and salt for about 2 hours, or until meat is tender.
- Once the beef is cooked, remove it from the water, and drain it, saving 2 cups of beef broth. When it is cool enough, shred it with your fingers.
- Add beef broth or bouillon to the beef in a mixing bowl, along with the ground cumin, tomato paste, tomato sauce, onion, and garlic.
- Mix ingredients well, and place mixture into a pot. Bring it to a boil, and cook it on low heat for 7-10 minutes.
- Accompany with rice, black beans, and yuca.
